“Tagliatelle alla
bolognese”:
is a dish that consists of thick, full-bodied meat and vegetable sauce
enhanced with wine and milk or cream served with pasta. |

“Tortellini”:
is a first course. Small pasta folded over and shaped into a ring or hat
shape. They are stuffed with mortadella, ham, and turkey chest. |

“Filetto alla bolognese”:
is a second course that consists of calf meat flavoured with Marsala wine.
During the cooking ham and lots of parmigiano cheese is added. |

“Trippa bolognese”:
this second course if one of the most famous ones in the region. Its made on
a base of trippa, cow intestines, and then it’s prepared with eggs and
parmigiano cheese. It’s served hot with even more parmigiano cheese on top. |

“Buonissima”:
means something like “very tasty”. It’s a typical cake for the Emilia
Romagna region and it’s made with a paste that’s stuffed with honey, walnuts
and white rum. It is all covered with a mix of chocolate, sugar and a
teaspoon of lemon juice. |
